The chocolate of choice for the Michelin-starred pastry kitchens of The French Laundry, Per Se & Bouchon Bistro. K+M Chef’s chocolate was created to meet the demands of professional pastry chefs and chocolatiers as well as the home cook who wants to work with only the very best ingredients.
This single-origin dark chocolate is made with organic cacao from the Piura region of Peru. This medium dark chocolate has complex flavors or berries and dark cherry with notes of red wine and oak. Suitable for bars, ganache and fillings, ice cream, baking and pastry applications.
The chocolatiers partnered with Chef Keller’s pastry team from The French Laundry to suggest the following complimentary flavors: blueberries, passionfruit, red wine, dark cherries, delicate floral notes, honey/agave, oak.
The “Morceaux” consists of broken up pieces of couverture chocolate in an inconsistent chunk format, intended to be melted and tempered.
