Ingredients
- 100 g 35% cream
- 1,200 g milk
- 20 g coffee beans
- 5 g soluble coffee
- 260 g Belcolade Lait Selection 34% Milk Chocolate Discs
- 100 g Belcolade Noir Selection 55.5% Dark Couverture Chocolate Discs
Instructions
Preparation
- Boil the cream, milk, soluble coffee and broken coffee beans and leave to infuse for 5 minutes.
- Sieve the composition and heat it up.
- Pour onto the chocolate discs and mix to obtain a smooth hot chocolate. Serve lukewarm like a macchiato (50°C).
Serving
- Top the warm chocolate drink with semi-whipped, slightly sweetened cream and add a chocolate decoration on top (as seen in the photo).
- Because the whipped cream is cold the chocolate decoration will not melt.
