The chocolate of choice for the Michelin-starred pastry kitchens of The French Laundry, Per Se & Bouchon Bistro. K+M Chef’s chocolate was created to meet the demands of professional pastry chefs and chocolatiers as well as the home cook who wants to work with only the very best ingredients.
The 70% Dark Chocolate Blended Morceaux reflects the distinctive characteristics of each of K+M’s three single-estate cocoa bean sources: Hacienda Victoria Ecuador, Peru, and Nicaragua. This full-bodied dark chocolate has flavors of rich cocoa, plantain and walnut framed by a silken smooth texture and delicate floral aromas.
The chocolatiers partnered with Chef Keller’s pastry team from The French Laundry to suggest the following complimentary flavors: citrus, passionfruit, orange, ginger, toasted hazelnuts, coffee, and mascarpone.
The “Morceaux” consists of broken up pieces of couverture chocolate in an inconsistent chunk format, intended to be melted and tempered.
