The 49% Milk Couverture is a versatile milk chocolate with a velvet like texture and lingering flavors of espresso, toasted nuts, brown butter and caramel. Suitable for molding and enrobing, ice cream, ganache and a variety of functional pastry applications.
The chocolatiers partnered with Chef Keller’s pastry team from The French Laundry to suggest the following complimentary flavors: cappuccino/mocha, vanilla, caramel, toasted nuts, fresh cream, malted milk, butterscotch, marshmallows.
The “Morceaux” consists of broken up pieces of couverture chocolate in an inconsistent chunk format, intended to be melted and tempered.
