Tree to Bar

Tree to bar chocolate is produced from chocolate makers who have access but not ownership of the fruit in a chocolate orchard. If you see chocolate makers picking and fermenting their own cacao, or the farmers are specifically farming for the one chocolate maker, you will see them call it tree to bar. These chocolates can be made in facilities elsewhere, but the maker controls the entire process. Not to be confused with “bean to bar,” which is where chocolate makers purchase already-fermented, dried and aged beans via direct trade or through a co-op.
