Nordic Bean-to-Bar Chocolate

It all started in the summer of 2013: the vacation that never ended. A short coffee break during a summer holiday in Österlen, Sweden ended in the purchase of Skåne-Tranå’s old village school from 1893. Three months later, Ulrika & Fredrik Bergenkrans founded the chocolate company Svenska Kakao and became one of the pioneers of Nordic craft chocolate.

Even today, crafting chocolate from cacao beans is a unique way to make chocolate and only a handful of manufacturers exist in the Nordics. Ulrika & Fredrik travel around to various cacao producers in the world to choose the very best produce for their chocolate. This makes Svenska Kakao’s chocolate unique. The cacao beans as well as the producers are carefully selected to include aspects such as exceptional quality, sustainability, transparency, fair pricing and extraordinary taste. With a small team of skilled chocolatiers, everything is made from scratch in the small Österlen factory, in the Swedish countryside.

Over the years, Svenska Kakao’s chocolate has won several prizes in international competitions and has been served in Michelin starred restaurants, appreciated by renowned pastry chefs as well as represented in well-known department stores in cities like Tokyo, Paris and Berlin.

Svenska Kakao has been working with Kokoa Kamili since 2016, a bean producer in Tanzania. Their process is in the small village of Mbingu, a twelve-hour journey on dusty dirt roads from Dar Es Salaam. The dark chocolate has jammy notes of plums, cherries, raisins and sour green apples. Perfect for connoisseurs who love a higher acidity.

The beans are purchased from the producer Ucayali river cacao. Their fermentation station is just outside Pucallpa in Peru’s part of the Amazon. This dark chocolate bar is crafted with precision and emits elegant notes of rose, lychee fruit and freshly ground black pepper.

Öko Caribe Dominican Republic 70% Dark Chocolate Bar

These beans are coming from Öko Caribe in the cocoa-rich Duarte area of the Dominican Republic. The chocolate itself is a fine-tuned balance of honey, red berries and nuts, while maintaining a creamy mouthfeel and light berry tone.

The Ugandan beans are sourced through the producer Semuliki Forest Cacao, who buys freshly harvested cocoa at a premium price from primarily women farmers. This dark chocolate has fruity notes of banana bread, orange and cinnamon. Some connoisseurs discover flavor of bourbon whiskey coming through, and this is perfect for those who love a chocolate with high fruitiness.

Coming from the Ucayali river cacao outside of Pucallpa, Svenska crafts a high-cocoa option for dark chocolate lovers. The elegant notes of rose and lychee fruit come through with hints of freshly ground black pepper over a deep cocoa base.

An interpretation of a Swedish classic coffee break – coffee and cinnamon bun. The base is a dark milk chocolate where Svenska Kakao carefully grinds and adds lighly roasted coffee beans and aromatic cinnamon to create a tunely tuned harmony of flavors.

The coffee is roasted by their friends at Kafferäven in Gothenburg. It is grown by the Abakundakawa cooperative in Rwanda, which started in 1999. The coorperative supports single households and has mainly female members. Abakundakawa means, “we love coffee”.

The cocoa beans used in this chocolate are coming from Öko Caribe in the Dominican Republic.

Svenska’s craft dark milk chocolate with creamy notes of honey, red berries and nuts. The beans in this chocolate come from the producer Öko Caribe in the Duarte region of the Dominican Republic.

An extra dark chocolate with intense notes of nuts, raisins and dried figs. For the chocolate lover, this 100% chocolate, or cocoa mass, is only made from one ingredient: cacao beans. In Svenska’s version, they included extra cocoa butter, which is otherwise a common addition. “Why pour milk into coffee when you can drink it black?” is their thought.

The beans for this bar are coming from the producer Kokoa Kamili with their fermentation station in the small village of Mbingu, a twelve-hour journey on dusty direct roads from Dar Es Salaam, Tanzania. Svenska Kakao has collaborated with Kokoa Kamili since 2016.

Sea salt in dark chocolate: the classic combination. The salty and the sweet.

The sea salt comes from the small Danish island of Läsö in the Kattegatt Sea. Salt was mined there already in the Middle Ages. Læsø Salt works according to age-old traditions where the salty groundwater from teh Kattegatt is allowed to boul slowly over open fires. Every morning the salt is collected and left to dry in wicker baskets.

Here, Svenska Kakao has combined the salt with a 74% Dark chocolate made from cacao beans coming from Tanzania.

A dark milk chocolate containing 55% cocoa content to which Svenska Kakao has added a sweet-salty Italian raw licorice from Calabria. A chocolate with creamy notes of honey and nuts where the licorice emerges strongly towards the end.

The beans in this chocolate are sourced from Öko Caribe Dominican Republic.
