What is the Bean-To-Bar Movement?

The term “Bean-to-Bar” was initially created to distinguish artisanal chocolate makers from mass-produced chocolate manufacturers and conventional chocolatiers. This distinction emphasized the close connection between the final product and the production process. In this approach, makers are closely involved in every step of the manufacturing process, from sourcing cacao beans to creating the final product— from the cocoa bean to the finished bar. This hands-on method ensures that each chocolate bar reflects the unique characteristics of its origin, often providing a noticeably richer tasting experience.

Although “Bean-to-Bar” was initially coined to set chocolate makers apart from the rest of the industry, this term has undoubtedly broadened in scope since. Essentially, it represents the maker’s complete control over the process, as opposed to a chocolatier who often works with couverture chocolate, for example. This term should communicate to consumers that this chocolate is made entirely from the source (cacao beans) to the finished product, with specific standards, quality, and ingredients overseen by the maker.
