These luxurious couverture chocolates have been ground to 6-8 mm pieces for pastry and baking applications; intended to be melted and tempered for chocolatiering use (or you could snack on them right out of the bag). Balanced and complex flavors; rich and velvety texture.

This single-origin dark chocolate is made with organic cacao from the Piura region of Peru. This medium dark chocolate has complex flavors or berries and dark cherry with notes of red wine and oak. Suitable for bars, ganache and fillings, ice cream, baking and pastry applications.

The 49% Milk Couverture is a versatile milk chocolate with a velvet like texture and lingering flavors of espresso, toasted nuts, brown butter and caramel. Suitable for molding and enrobing, ice cream, ganache and a variety of functional pastry applications.

The 70% Dark Chocolate Blended Morceaux reflects the distinctive characteristics of each of K+M’s three single-estate cocoa bean sources: Hacienda Victoria Ecuador, Peru, and Nicaragua. This full-bodied dark chocolate has flavors of rich cocoa, plantain and walnut framed by a silken smooth texture and delicate floral aromas.
