Domori Trinitario Teyuna Colombia 70% Dark Chocolate Bar

From: $13.99

50g Bar

Description

Sourced from the Colombian region of Tierralta, this Trinitario cacao carries in its name the allure and mystery of ancient Teyuna, the “lost city” of the Indios, rediscovered by archaeologists in 1976 in the Sierra Nevada de Santa Marta. On the palate, it stands out for its rare sweetness and finesse, with notes of cashew blending into a delicate honey finish, in an elegant, refined aromatic profile.

Trinitario is an aromatic cacao variety accounting for 8% of the world’s cacao harvest, born from the hybridization of Criollo and Forastero: from this union it inherits the resilience and high yield of Forastero, together with the rich, noble aromatic profile of Criollo. Domori sources this precious variety from plantations spanning Latin America and Africa — Colombia, Venezuela, Peru, Madagascar and Tanzania — transforming the beans every day through the shortest, purest recipe in chocolate making.

Domori received in 2009, for the production of the Colombian Trinitario “Teyuna” bars, the prestigious Tavoletta d’Oro award in the “Origins” category, assigned according to specifications created by “La Compagnia del Cioccolato”, made up of more than 1000 members of great importance in the panorama of food: culinary journalists, Chefs, professional tasters.
