Description
From the Sambirano river valley, in western Madagascar, comes this Trinitario 70%; a hybrid of Criollo and Trinitario cacao with a strong Criollo character. Its aroma is intense and enveloping, with notes of red berries, cashew, pepper and cinnamon, balanced by a pleasant acidity that lifts its vibrancy. On the palate, it is sweet and round, with an aromatic persistence that lingers beautifully in the finish.
Trinitario is an aromatic cacao variety accounting for 8% of the world’s cacao harvest, born from the hybridization of Criollo and Forastero: from this union it inherits the resilience and high yield of Forastero, together with the rich, noble aromatic profile of Criollo. Domori sources this precious variety from plantations spanning Latin America and Africa (Colombia, Venezuela, Peru, Madagascar and Tanzania), transforming the beans every day through the shortest, purest recipe in the world.
