Description
Chuao is an ancient variety of Criollo cacao that takes its name from the Venezuelan village where it was discovered: its completely white beans lend the chocolate an incredible, entirely natural sweetness and roundness. Notes of hazelnut, dulce de leche, lucuma and mamey unfold with a light, balanced acidity, in an aromatic profile that captivates from the very first taste.
Criollo is the rarest and most precious cacao variety in the world, free of tannins and capable of a creaminess, roundness and sweetness unmatched by any other bean. Domori rescued this variety from extinction by establishing the largest Criollo plantation in the world in Venezuela, transforming the beans every day through the shortest, purest recipe in chocolate making. A journey of excellence recognized internationally: Chuao Domori won the Tavoletta d’Oro award in the “Le Origini” category in 2010, 2012, 2013, 2014 and 2021, and in 2016 critic Georg Bernardini included it in his book “Chocolate – the reference standard” as one of the best chocolates in the world, with a score of 98.05/100.
