Drink Base
- 400 g Coconut Milk
- 115 g Passion Fruit Puree
- 125 g Valrhona Passion Fruit Inspiration Couverture Feves
- 75 g White Rum
Coconut Foam
- 800 g Milk
- 200 g Coconut Purée
- 75 g SOSA Pro Espuma Cold
Instructions
Drink Base
- Defrost the frozen fruit purées, and melt the 125 g Valrhona Passion Fruit Inspiration Couverture Feves.
- Heat the coconut milk and pour over the 125 g Valrhona Passion Fruit Inspiration Couverture Feves in several additions, stirring to create a proper emulsion.
- Finish by adding the purées then the white rum, and refrigerate.
Coconut Foam
- Add the defrosted frozen coconut purée to the coconut milk.
- Mix with the SOSA Pro Espuma Cold. Refrigerate.Enjoy!
