  • Line 8" square baking pan with parchment paper.
  • In a 3-quart saucepan, combine sugar, maple syrup and evaporated milk.
  • Bring to a boil, without stirring, until mixture reaches 225°F.
  • Remove from heat; add salt, butter, and 305 grams of the Guittard 100% Unsweetened Dark Chocolate Baking Bars.
  • Whisk until fully melted. Whisk vigorously for 30 seconds, let mixture rest for 30 seconds, then one more 30 second vigorous whisk.
  • Stir in optional toasted walnuts.
  • Pour mixture into prepared pan, spreading evenly and allow to set before serving.

Notes

For best results, rest fudge for 6-8 hours and store in airtight container at room temperature.
