- Milk
- Whipping Cream
- Prova Gourmet Madagascar Bourbon Vanilla Extract
- Cacao Barry Fleur de Cao 70% Dark Chocolate Baking Discs
- Pasteurized Egg Whites
- Invert Sugar
Instructions
- Boil the milk and whipping cream together. Infuse with the Prova Gourmet Madagascar Bourbon Vanilla Extract.
- Emulsify the liquid homogeneously with the Cacao Barry Fleur de Cao 70% Dark Chocolate Baking Discs.
- Separately, whisk the egg whites with the invert sugar to medium peaks. Do not beat until stiff as it will make it difficult to incorporate the other ingredients.
- Mix a part of the egg whites with the emulsion, blend and finally fold in the remaining whites.
