Meso Cacao is a new fine chocolate which specializes in Central American cacao, as well as direct trade relationships with the cocoa farmers. The company even takes it a step further in listing the pricing paid to the farmers, while encapsulating the central-American cacao’s flavor profile. Using Trinitario cacao grown in Mayan soil, the only ingredients used are cacao nibs, cocoa butter, cane sugar, and sometimes non-GMO sunflower lecithin. Meso Cacao also pays farmers 41%-149% higher rates than market alternatives.

Cacao beans for this chocolate are collected in the north central part of Honduras near Pico Bonito National Park named for the mountain (beautiful peak) that bears its name. This area is very popular for birdwatching, rafting, kayaking and hiking, and is a part of the Mesoamerican Biological Corridor.

Cacao beans are purchased from the Honduras Foundation for Agricultural Research (FHIA), a nonprofit dedicated to helping improve the lives of farmers.

Cacao beans for this chocolate are grown in the Matagalpa department of north central Nicaragua near the continental divide between the Pacific Ocean and the Caribbean Sea. This region is increasingly popular with ecotourists because of its beauty and biodiversity. Originally it was home to the Matagalpa Indians whose language was spoken until 1875. This fertile area is known for its great coffee, vegetables, and flowers.

Meso Cacao’s farmers are paid dry equivalent rate of $2.37/kg for fresh wet babba (cacao seeds/beans) in a local market that paid $1.53/kg for dried unfermented beans – an increase of 55% without the added labor of drying beans.
