About the Dates:
Date fruit is a delicious way to sweeten things up. Grown on date palm trees, they are native to arid regions of the Middle East and North Africa, and are now cultivated in many tropical and subtropical regions around the world. Dates grow in clumps, are harvested when ripe and can be eaten fresh or further dried. To make date fruit sugar fresh dates are sorted, washed, and pitted. The entire fruit is then dried and ground to a powder. As compared to conventional sugar, date sugar is less processed and contains more natural fiber, vitamins and minerals because the whole fruit is used.
Organic Deglet Noor dates were used to create this date sugar. The Arabic name “Deglet Noor” translates to mean “date of light” or “bright date,” likely named because the date fruit is a translucent golden amber color when harvested. As compared to other varieties, the Deglet Noor date is smaller, firmer and has a balanced and robust sweet and nutty flavor profile.

To craft this bar Goodnow Farms starts with beans they source directly from the Salazar family farm in the Esmeraldas region of Ecuador. The Salazars have over one hundred acres of carefully cultivated, handpicked Nacional hybrid cacao trees. They ferment and dry all of the beans themselves right on their farm, allowing for an exacting level of control over the entire process.
