Description
Goodnow Farms sources the beans for this bar from farmer Vicente Caçep, whose family has been growing cacao on his Hacienda Jesus Maria farm in Tabasco, Mexico for over 80 years. The roasted almonds are from Burroughs Family Farms in Denair, CA, a leader in regenerative agriculture. All of their almonds are grown with no synthetic pesticides, herbicides or fertilizers. We source them through the Equal Exchange cooperative in West Bridgewater, MA.
To craft this bar, Goodnow Farms grinds the almonds in a food processor until they’re the same size as grains of sand, the add them to their tempering machine where they mix evenly with the chocolate (see the pic in the gallery). This allows for a consistent balance between the flavor of the almonds and the flavor of the chocolate in every bite. Note that while this bar is crunchy it does not contain whole almonds!
This bar is crafted with freshly pressed Almendra Blanca cocoa butter for intense single origin flavor and exceptional smoothness. Goodnow Farms is one of the only chocolate makers in the country to press their own cocoa butter, and it makes a world of difference in flavor.
