Description
Criollo is the rarest and most precious cocoa variety in the world: it accounts for only 0,01% of global production and is free of tannins, which are the source of bitterness and astringency in other cocoas. This genetic purity translates into a creaminess, roundness, and sweetness that are unique in the world.
Domori saved this variety from extinction, establishing the largest Criollo plantation in the world in Venezuela; this is the birthplace of Canoabo, crafted according to the purest recipe in existence. On the palate, it reveals itself to be soft, with a barely perceptible acidity and a velvety, enveloping texture. Notes of cream, dates and almonds intertwine in a rare balance, offering an extraordinary roundness and an aromatic persistence that lingers long into the finish.
