
You may have seen some buzz on the news recently about “Ruby Chocolate…” Those of us in the industry have been aware of this bean variety for quite a while, and it has been available in limited quantities overseas from Cacao Barry for some time! However, here in the United States, it has been navigating it’s way through the FDA seeking authorization for the Ruby bean to be categorized as “chocolate.” It appears that journey is nearing completion and the media has picked up the story, which is causing quite a stir!
