The Rich Legacy of Italian Chocolate

Chocolate was brought to Italy in the 16th century by the Spanish, initially enjoyed as a hot, spiced drink by nobility at the Savoy court in Turin. Turin became a major chocolate hub, opening its first chocolate house in 1678. The early 19th-century Napoleonic blockade restricted cocoa imports, prompting Piedmontese chocolatiers to blend cocoa with local hazelnuts, creating Gianduja. In 1865, Caffarel-Prochet introduced the Gianduiotto, a renowned hazelnut chocolate that inspired various chocolate products seen today. Other regions produced distinct treats, such as Perugia’s Baci chocolates and Modica’s unique, grainy chocolate crafted using traditional methods. Today, Italy is renowned for its artisanal chocolate that seamlessly merges tradition and innovation.

To create Domori chocolate and its unique aromatic complexity, Criollo cocoa is directly sourced from their plantations in Venezuela and processed every day in their facilities in None, Turin, with the a short and pure recipe. This choice is combined with their innovative productive process, where each phase is designed to preserve the aromatic notes naturally found in the aromatic cacao beans.

Amedei

Founded in 1990 by the Italian chocolatier Cecilia Tessieri, Amedei began producing pralines from a small facility in Italy and soon grew to produce a number of other chocolate confectionaries using their own grown cocoa beans and natural ingredients.
