They produce organic, ethically traded, ‘bean to bar’ chocolate of the highest quality possible and add the finest natural ingredients from the Nordic nature. Their small factory is located in Hardangerfjord in Norway where they are sourcing local Nordic ingredients. There the social enterprise Kokoa Kamili drives a huge change by buying wet beans directly from the farmers at premium prices, and carefully controlling fermentation and drying. This chocolate has won six international awards.

This chocolate is a collboration with JACU coffee roasters based in Ölesund, which was established in 2011. Similar to the Jacu bird, they pick and roast only the best beans. They look for great plantations, optimal processing and the roasting profiles which will make the most out of each bean.

Öko-Caribe Dominican Republic 36% White Chocolate Bar with Cocoa Nibs

Creamy white chocolate with hints of coffee and wood. This white chocolate is made with natural cocoa butter from the Dominican Replubic and topped with cocoa nibs from the same beans.

The cocoa nibs comes from the cacao-rich Duarte province of the Dominican Republic, Öko-Caribe (or “eco-Caribe,” in German) is a gem amongst cacao suppliers. With more than 50 years of combined experience in cacao, owners Adriano de Jesus Rodriguez and Gualberto Acebey Torrejon have fine-tuned their systems to ensure consistent, superior quality in their 500+ tons of annual production. Öko Caribe maintains close relationships with its 127 producers through technical training in agronomic practices and organic certification. In addition, owners Adriano and Gualberto have personal relationships with all producers, offering microfinance loans for cacao-related expenses, as well as personal loans for family emergencies or other community needs.

Round creamy milk chocolate with a crunch of nibs & oak smoked salt from Bodø, Norway.

Certified Organic – The cocoa beans comes from PISA, Haiti. PISA is the only company purchasing and centrally fermenting wet cacao, and as a result are able to sell it at a higher price for its higher quality. Farmers now earn approximately four-times as much money as they did before PISA, and are simultaneously incentivized to protect their trees from the environmentally degrading charcoal market.

Crunchy roasted nibs give texture to a velvety milk chocolate with floral and nutty tasting notes, while the oak smoked salt enhances flavor from start to finish.

By infusing Dominican Republic cocoa nibs with an aromatic gin from Feddie Ocean Distillery, Fjåk has created a dark bar with boozy hints of fresh lemon and licorice. Feddie Ocean Distillery is located on the remote island of Fedje, on Norways west coast. 100% organic.

This bar is part of ‘The Cake Series’, where Fjåk reinterprets classic cakes as chocolate bars. Although this cake’s roots are in Germany, their factory is actually located in a region abundant with sour cherry trees. Therefore, this flavor was an obvious choice, especially when you consider there are not many better combinations than cherry and chocolate.

Chanthaburi is a beautiful region, located on the coast just a few hours drive southeast of Bangkok. During Fjåk’s visit to Thailand they had the pleasure to meet husband and wife team Boom and Suriya at their small farm together with the whole Thai Cacao team. Fjåk spent time together visiting farms and the fermentation process center. In the evening they sang karaoke together with Boom, she is not only and amazing cocoa farmer but the best karaoke singer!

Intense dark chocolate with notes of leather and nuts. The certified organic cocoa beans are coming from the Semuliki Forest. Semuliki National Park is located in the Bundibugyo Region of remote Western Uganda, and is home to some of Africa’s most diverse floral and faunal wildlife. Semuliki Forest cacao is grown by 1,002 organic smallholder farmers in the region, 52% of whom are women. Latitude Trade Co. (LTC), the company that processes and exports this cacao, has organized 6 rural collection points for farmers to access, where they sell fresh cacao weekly into the network and receive cash at the point of sale. LTC’s centralized fermentation facility and warehouse is located in the village of Bumate, at the base of the hills leading into the mountains.

Notes of roasted almonds, black tea and tobacco make this pure chocolate a delight for the palate even without sugar. Gentle, complex and never too bitter.
