Single Origin Chocolate: Panama
For a while the Central American regions did not produce nearly as much cocoa as the Ivory Coast & Ghana, although the continued focus and vested interest of bean-to-bar blends is generating more interest for Panamanian Cacao. The country produces roughly 662 metric tons of cocoa per year, but this is not even 1% of what West Africa is providing. The difference in the beans comes in the quality. The conditions in the region are excellent for growing the crop, and many of the blends are Organic without any perticides or treatments, resulting in a much more pure & clean flavor. The majority of Panamanian cacao is grown on small farms who often work in direct trade with bean-to-bar chocolate makers.
