Domori has the largest collection of Criollo cacao beans in the world, seen as a world heritage for the taste and recovery of biodiversity. Criollo is the rarest and most prized variety of cacao, but on the verge of extinction this past century: it is the cacao of the Mayas and the Aztecs, whose cultivation has been continuously abandoned due to its low yield. It is a rare and fragile cacao and represents less than 0.001% of the world’s global cocoa production. The quality of this cacao is unmatched, naturally free of tannins, and boasts a creamy, rounded and sweet taste. With the Criollo Project, founded in 1994 thanks to Gianluca Franzoni, Domori has recovered this precious variety of cacao, also incorporating Hacienda San José in Venezuela, the largest Criollo plantation in the world.

The Porcelana cacao bean is extremely rare, and a precious plant. It is one of the most delicate cacaos in the world and often becomes prone to insects & fungi once ripe. These beans have been grown in the Andes since antiquity, and was rediscovered and grafted by Domori in the late 90’s. These are now grown in Domori’s Hacienda San José plantation in Venezuela. The name “Porcelana” comes from the appearance of the beans; they are oval shaped with a smooth surface, and have a translucent hue making them look like porcelain. This chocolate has zero acidity with great sweetness and roundness.
Criollo Guasare 70% Dark Chocolate Bar

Guasare is another rare Criollo bean, known to be the “mother” of all Criollo varieties. Domori has been cultivating this bean in their plantation in Venezuela since 2002. The chocolate blend is known for its fineness and characteristic aromas among connoisseurs, and is devoid of acidity with great roundness and sweetness.

The Chuao Criollo variety is another ancient crop taking name from the village in Venezuela where the genetic makeup was first identified and selected. The Chuao beans are completely white. This chocolate has a light acidity with great sweetness and roundness.
