Baianí’s chocolate is made from high-quality cacao grown on their farm in Arataca, Bahia. The quality of cacao beans significantly influences the flavor of chocolate bars, with superior beans ensuring a delightful flavor experience. By carefully overseeing the production process, Baianí practically guarantees the excellence of their chocolates. Their cacao thrives in the lush Atlantic Forest of Bahia, cultivated using an agroforestry method known as Cabruca, which nurtures the area’s vibrant biodiversity of plants and animals.
Baianí chocolate bars embody the rich heritage of the Pinheiro and Aquino families, who have been engaged in cacao farming in Bahia since the late 19th century. The Pinheiro family has proudly owned the Santa Rita farm since 1973.

Baianí’s chocolate quality arises from their passion and hands-on involvement in every step of production, from selecting the finest cocoa beans in Bahia, to crafting exceptional chocolate bars.
1. Farm Activities and Maintenance of Their Orchards
Baianí’s cacao trees receive dedicated care through a variety of agricultural practices including planting, grafting, pruning, soil correction, fertilization, mowing, and shade management, among other essential activities.
2. Harvesting
Choosing the appropriate ripeness of pods is crucial for achieving the best results.
3. Fermentation and Drying
This stage focuses on developing the essential flavors. Here, Baianí uses precise protocols and advanced technology to carefully track each micro-lot, ensuring that every step of the process is recorded.
4. Aging
Every micro-lot is carefully aged in a controlled environment for a minimum of 75 days before being assessed for its sensory qualities and then dispatched to Baianí’s factory.
5. Roasting
At this important stage, Baianí meticulously evaluates each micro-lot to determine the optimal roasting profile.
6. Winnowing
Separating husks from clean nibs with care is essential for minimizing bitterness in the bars.
7. Refining and Conching
Baianí bars deliver a delightful smoothness that preserves the rich flavors of cacao, guaranteeing a truly satisfying taste experience.
8. Tempering and Molding
