Ingredients

Drink Base

Coconut Foam

  • 800 g Milk
  • 200 g Coconut Purée
  • 75 g SOSA Pro Espuma Cold

Instructions

Drink Base

  • Defrost the frozen fruit purées, and melt the 125 g Valrhona Passion Fruit Inspiration Couverture Feves.
  • Heat the coconut milk and pour over the 125 g Valrhona Passion Fruit Inspiration Couverture Feves  in several additions, stirring to create a proper emulsion.
  • Finish by adding the purées then the white rum, and refrigerate.

Coconut Foam

  • Add the defrosted frozen coconut purée to the coconut milk.
  • Mix with the SOSA Pro Espuma Cold. Refrigerate.
