- 200 g Coconut Purée
- 75 g SOSA Pro Espuma Cold
Drink Base
Defrost the frozen fruit purées, and melt the 125 g Valrhona Passion Fruit Inspiration Couverture Feves.
Heat the coconut milk and pour over the 125 g Valrhona Passion Fruit Inspiration Couverture Feves in several additions, stirring to create a proper emulsion.
Finish by adding the purées then the white rum, and refrigerate.
