On top of the highliy-acclaimed Swiss Noble Couverture, Felchlin also offers a plethora of Glazes and compounds for molds, including their “Ultra” glaze and two “Mirror” glaze options. These products do not need to be tempered, but result in a premium taste your customers know and love.
Felchlin’s compounds primarily use coconut oil, shea butter, and/or illipe butter in replacement of cocoa butter, and fall under two general categories:
The compounds denoted with the “M” in the title set firmer, and are more intended for molding, whereas the other blends set a bit softer, and are more intended for dipping, enrobing and glazing. More information can be found below!

Ultra Dark, Coating Dark Rondo
A Dark Chocolate Flavored Compound for Dipping, Glazing and Enrobing
Ultra Dark is the ideal coating for chocolate cakes and pastries. Cuts cleanly and has a great chocolate taste. This product is typically used to cut pralines and specialities, fill hollow shells and create ganaches, mousses and creams.
This product sets a bit softer than “Ultra Dark M” compound, and is intended for coating cakes, tarts, pastries and confectionaires.
Ultra Milk, Coating Milk Rondo
A Milk Chocolate Flavored Compound for Glazes, Enrobing & Dipping
Ultra Milk is the ideal coating for your chocolate cakes and pastries. Cuts cleanly and has a great chocolatey taste. This product uses coconut oil, shea butter and illipe butter in substitution of cocoa butter.

Ultra White M, Coating White Rondo
A Firm-Setting Premium White Compound for Molding & Glazing
This easy to use coating doesn’t need tempering and ensures that your cakes and pastries are showcased in the best possible way with a shiny finish. Its authentic chocolate taste convinces, while it cuts cleanly. This product uses hardened coconut fat & hardened palm kernel oil in replacement of cocoa butter.
