Made from the Java whites, a variety of Criollo cocoa bean unique to Java, this chocolate is full of subtle flavor. Smooth on the palate, caramel flavors come first, then the hints of toasted marshmallow and banana on the finish. The cocoa beans for these chocolates were harvested and made into chocolate in 1999. The chocolate was aged in the Chocolove facility for 5 years, then melted, tempered and packed into bars in December 2004. The aging softened the bitter flavors and the recent tempering has made it shine and melt like a new chocolate. Each bar has a Limited Production number.
